The Plant-Based Foods Department at the Institute of Food Science and Biotechnology at the University of Hohenheim is looking for a doctoral candidate to start in May 2026 to establish high-throughput analytics for predicting the quality of bread wheat.
Our department has considerable experience and equipment in the field of plant-based raw materials, with a particular focus on cereal products. We have an extensive network in both science and application and look forward to working with you in this field of research.
Research work
The aim of the work is to investigate the fermentation stability of different flours. To this end, research partners will provide different varieties grown under variable conditions. In addition to comprehensive flour characterization, the establishment of high-throughput analytics will be a key focus of the work.The data collected will then be correlated with our partners within and outside the University of Hohenheim to predict the quality of bread wheat.
The following tasks are included:
- Establishment of high-throughput analysis for determining fermentation stability
- Characterization of dough formation and baking quality
- Expansion of baking quality description
- Characterization of starch properties and their effects on baking performance
- Project management
- Publication of findings in scientific journals and conferences
- Transfer of knowledge into teaching

Requirements
- Completed master's degree in food technology, food chemistry, bioprocess engineering, or a comparable field
- Knowledge of scientific work
- Very good written and spoken German and English skills
- Creativity, enthusiasm, and team spirit

Remuneration is in accordance with pay grade E13 TVL-L (50% of regular working hours with subsequent top-up). The position is intended for a PhD.
