New publication: Contact area determination between structured surfaces and viscoelastic food materials  [18.08.22]

The flow behavior of viscoelastic foods in structured surfaces was determined and two methods for detecting the contact area between viscoelastic food materials and solid surfaces were developed. Finally, optimized structures for dough processing in the food industry were identified.
